The story begins before the town wakes up

The lanterns went dark hours ago. The old town lies still under a thin mist from the Hoài river. But down by the wharf, the dawn market is already alive — night boats returning from Cù Lao Chàm, baskets of fish still wet with seawater.

There, our chef does the most important work of the day. Not cooking — choosing. A squid still shimmering rainbow means it left the water hours ago. A fish still curved, gills bright red — that one is worth bringing home. Picky, exacting — just like a Vietnamese mother shopping for her own family’s meal.

In Vietnamese, “đi chợ” — going to market — has never meant simply buying. It means choosing the very best, not for yourself, but for the people you love. That is how Đi Chợ runs, every single day.

Chef Thiện — the one who goes to market

Some chefs cook for one family table. Others cook for a thousand guests a night. Chef Thiện has done both — serving heads of state, standing beside two-Michelin-star chefs in France and Vietnam. Yet ask him about the finest dish he knows, and he still names his grandmother’s bún thang.

At three in the morning he is at Bà Lê market. At four, An Bàng. At five, the old-town market — not to buy, but to read the season. Behind him stands a young Hội An team trained to do one thing well: help you “go to market” at your table, and choose the best of today’s catch.
